Vitamin Filled Cabbage Soup Recipe

Cabbage soup is usually thought of as a boring tasteless meal that is part of an extreme diet plan, however, a well made cabbage soup recipe can supply you with many liquid vitamins and minerals that you need to keep your body strong and running at its full potential.  Cabbage alone contains vitamins A, C, E, and B, but when combined with other ingredients in the soup, you can make yourself a nutrition powerhouse of a meal!  Use the cabbage soup recipe below to use as a pre-meal appetizer or add some protein with meat or beans to create a main course.

Vitamin Packed Cabbage Soup Recipe
Ingredients:
–    1 head of cabbage ( a mix of purple and green cabbage is ideal)
–    3 carrots
–    3 stalks celery
–    1 onion
–    1 green bell pepper
–    1 red bell pepper
–    3 medium sized red potatoes
–    2 small kale leaves
–    Cubed cooked chicken or pork (optional)
–    1 cup black beans (from a can, rinsed, optional)
–    2 cloves garlic
–    Herbs of your choice such as, parsley, cilantro, basil, chives, or dill (optional to taste)
–    Salt and pepper
–    6 chicken or vegetable bouillon cubes
–    8 cups water

To make the soup, chop all of the vegetables and place them in a large soup pot. Cover the vegetables with the water and add the bouillon cubes, herbs, spices, and remaining ingredients. Bring everything to a boil. Let the mixture boil for a couple of minutes and then turn the heat down to medium low and let the soup simmer for one to two hours or until all of the vegetables are cooked through and tender. Season with salt and pepper to taste. Serve with a piece of crusty whole grain bread or with your favorite main course meat or vegetarian dish.
