Easy to Prepare Vegetable Soup Recipe

Soups are a great addition to any meal as a starter, even though they can easily form the meal itself, depending on the type of soup you prepare. If you are a fan of soups you are probably always on the look out for new and exiting recipes, but it is also very easy to make up your own, as long as you follow a few basic rules.

For example, if you want to prepare a vegetable soup recipe you can rest assure that most vegetables combine perfectly, so you can easily replace one vegetable with another one. Some people like to start off with making their own broth, but if you do not have the time to do so, there is nothing wrong for using ready made stock or broth cubes. In the case of preparing vegetable soup, you will want to match the broth with the ingredients, if it will just be vegetables, you can use a vegetable broth or even a beef stock, in the case you will be adding some chicken later on, chicken broth will be the best option.

If you like a savory soup, you should try making a vegetable soup with beef stock, a can of tomato sauce, broccoli, zucchini and mushroom. To turn this into a meal soup, you can choose to add some pasta loops and bits of beef. This will definitely become a real hit in your family, especially if you finish it off with adding some croutons and top it off with grated cheese and put it in the oven for a few minutes to melt the cheese and give it a golden brown color.

This soup will only take you about half an hour to finish, and certainly not longer, because you will want to avoid overcooking the vegetables. In fact, if you chop them small enough, you will only have to bring them to the boil and then turn the heat down, to maintain all the natural flavors.
